Release of ferulic acid from plant polysaccharides by ferulic acid esterase from Streptomyces olivochromogenes

Abstract

Streptomyces olivochromogenes ferulic acid esterase released free ferulic acid from 0-[5-0-(trans-feruloyl)-α-l-arabinofuranosyl]-(1→3)-0-β-xylopyranosyl-(1→4)-d-xylopyranose (FAXX) prepared from wheat bran. The Km and Vmax of the reaction were 0·24 mm and 0·134 U mg-1, respectively. The enzyme released 0·25% of the covalently bound ferulic acid from sugar beet pectin both in the presence and in the absence of pectinase.
