Abstract

Goldenberries (Physalis peruviana L.) are exotic fruits that originated in South America. The fruits are highly susceptible to mechanical injury and microbial activity. Drying is one of the oldest and most prevalent approaches to fruit preservation. This chapter aims to review the drying techniques employed to dehydrate the high moisture content of goldenberries. The effects of different drying techniques on the physicochemical properties of goldenberries are also compiled and discussed.
